Classic BLT Sandwich

My neighbor takes motorcycle road trips all the way from NorCal to NorIda (northern Idaho) to pick up the best thick-cut bacon I've ever tasted. It's grown, slaughtered and smoked on an organic farm that is far off the grid, and the bacon is cut and neatly packaged before I ever see it. I order multiple packs at a time, because I'm never sure I'll be able to get it again. This classic BLT is the perfect home-made fast comfort food, and goes great with an ice cold lager or a good bourbon on the rocks if you are feeling a little sore and pissed off from a long day at work, and need a little comfort in your belly.

Ingredients

  • 2 pieces crisp fried thick bacon, cold
  • 2 leaves crisp Iceberg lettuce
  • 2 thin slices ripe beef steak tomato
  • 2 slices fresh whole wheat bread
  • 1 tbs Best Foods mayonnaise
  • Dash salt
  • Dash fresh ground black pepper

Directions

Toast the bread if you have the patience. Spread mayonnaise on one side of each bread slice. Grind a dash of black pepper onto each bread slice. Lay the bacon slices on one slice of bread to cover it fully. Lay the tomato slices on the top of the bacon to cover it as much as possible. Give the tomato slices a dash of salt. Stack the iceberg lettuce on top of the tomatoes. Flip second bread slice over onto the bacon/tomato/lettuce stack to make a sandwich. Eat with gusto.
