Easy peasy basic polenta recipe as relayed to me by my friend Paige. Brilliant as a side dish, or serve it as a base layer under stewed or braised meats or vegetables that have a lot of juice or sauce.
Ingredients
- 2 cups water
- 2 cups organic chicken broth (optional*)
- Salt to taste
- 1 cup medium-grain yellow polenta
- 2 tablespoons butter
- 1/2 cup grated cheese
- *use water instead, and 2 more tablespoons of butter

Directions
Bring broth and water, lightly seasoned with salt, to a boil over high heat, about 5-6 minutes.
Whisk in the polenta a little at a time, quickly, until fully mixed in.
Lower the heat to a simmer, add in the butter and allow the polenta to cook, stirring occasionally, for 30 minutes.
Finish up by mixing in the cheese.
Serve immediately or keep warm on very low heat.
Other tips: Can be refrigerated and reheated on the stovetop if you add a little water. Recipe can be halved, doubled or tripled.
