
This isn't even a recipe; I'm just making sure everyone knows: kale tossed with olive oil and grilled in the grill basket next to your sausages or chicken or lamb chops or vegetarian proteins is so fabulously delicious. You knew that, right?
Ingredients
- 1 bunch kale (curly gets nice and crispy on the edges, but lacinato works okay)
- 1/2 onion
- olive oil, red pepper flakes, Maldon salt or kosher salt
Directions
Heat the grill. When it's hot, turn the burners to medium-medium low
Rinse the kale and chop it into 2 inch strips
Cut the onion half into 1/2-inch wedges
Toss the kale and onion in a large bowl with some olive oil, red pepper flakes and salt
Grill the kale and onion mixture in the grill basket over medium or medium-low heat for about 15 minutes --check and toss once or twice to keep them from burning
