
My daughter wanted to hold a cooking competition with me. This was her entry. I thought she won just on creativity. She knew that the sweet and salty flavor would complement each other.
Ingredients
- Cold, cooked rice noodles
- 1 crimini mushroom
- 1 peach
- 1 zucchini
- Frozen or fresh corn
- Handful of fresh basil leaves
- Seaweed sprinkles
- Sesame oil
- Rice wine vinegar
- Salt
- Honey

Directions
Arrange noodles on a plate
Sprinkle with sesame oil, vinegar, salt and honey
Slice peaches and zucchini
Arrange mushroom, sliced peaches, zucchini and corn on noodles
Top with seaweed sprinkles & fresh basil
