I was a volunteer in Fire Depts and Rescue Squads in Virginia an Maryland for over twenty years. Chili was a natural comfort food in the winter.
Ingredients
- 1 1/2 lbs ground beef
- 2 large onion (chopped)
- 3 28oz. cans whole plum tomatoes
- 2 15oz cans kidney beans
- 1 serano chili
- 1 jalapeño chili
- 4 cloves garlic (minced)
- 3 Tbsp chili powder
- 1Tbsp oregano
- 1Tbsp cumin
- Chili flakes (optional)
- Sour cream
- Cheddar cheese (grated)
Directions
Reserve 1 chopped onion for serving
In a large pot on medium, cook the other onion until soft. Add garlic until fragrant. Add chili’s and cook for a couple of minutes. Add spices an cook for a minute. Then add tomatoes. When it comes to a boil, reduce heat to Low, cover and simmer.
Brown ground beef in a separate pan on medium high. Add to pot of chili. Put the pan back on heat and add 1/2 bottle of beer to deglaze. Pour contents in the pot of chili.
The longer it cooks the better it will be
Don’t forget to drink the other half a bottle of beer!
