Cast Iron Skillet Corn Bread

Cast Iron Skillet Corn Bread by darcy

Super easy and deeee-lish!

Ingredients

  • 1 Cup All-Purpose Flour
  • 1 Cup Coarsely Ground Cornmeal (I like Bob's Red Mill Cornmeal)
  • 1/4 Cup Sugar
  • 1- 1 1/2 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 Cup Milk
  • 2-3 Eggs (the more eggs you use the more light and cake-like the bread will be)
  • 1 Stick Unsalted Butter (plus extra for spreading on top while serving)

Directions

Preheat the oven to 325ยบ.

Place a stick of butter in a 12-inch cast iron skillet on low heat on the stove top while you make the batter. Keep an eye on the butter to avoid it bubbling/browning.

In a large bowl, whisk together the cornmeal, flour, sugar, salt and baking powder. When the dry ingredients are combined, whisk in the milk and eggs.

Once the butter has melted in the skillet, lift it and rotate carefully to coat the inside of the skillet with the butter. Add all of the butter to the batter and whisk to combine.

Immediately pour the batter into the skillet and place it in the center of the oven. Bake until the center is firm and a toothpick inserted into the center comes out clean, 25 to 35 minutes (cooking times vary). Allow to cool for 10 to 15 minutes and serve.

*I sometimes sprinkle shredded cheddar cheese and jalapenos on top of the cornbread just before baking.
