
Here's something fun for the weekend.
To serve, you can either drizzle the toast with the stewed berries. Or for those of you in the mood, use a cookie cutter and cut out a heart or any other special shape.
You can also use other berries with this recipe but I like strawberries because, when sliced, they continue the heart theme.
Ingredients
- STEWED STRAWBERRIES
- a generous 2 cups (probably actually 2-1/2 cups) frozen strawberries
- 3 tablespoons sugar
- juice of half an orange
- 1/4 teaspoon orange zest
- FRENCH TOAST
- 3 eggs
- 1/2 cup milk
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 8 slices bread
- 1 tablespoon butter
- sliced fresh berries for garnish (optional)
Directions
Preheat oven to 350ยบ.
Add all sauce ingredients to a small sauce pan over low heat. Stir occasionally and bring to a simmer. Cook until berries break-up or sauce is reduced.
Mix eggs, milk, vanilla, and cinnamon.
Dip slices of bread, coating both sides, then set aside on a rack to allow the excess mixture drain off.
Heat bread in skillet or griddle over medium heat. Cook bread until golden brown -- about 3 minutes per side. Transfer slices to a baking sheet and bake for 5 minutes.
If desired, cut the fun shape in the toast before adding berries and serving.
