Split Pea Soup

Traveling between NoCal and SoCal, you have to have stopped at Pea Soup Andersen's at least once. (If you haven't, do yourself a favor and stop...take a break...have some soup. It's definitely worth it.)

I bought a soup mix to bring the experience home...only to discover that it was just peas and a recipe...this recipe.

Enjoy!

Ingredients

  • 2 quarts water
  • 2 cups Andersen's Green Split Peas
  • 1 stalk of celery, chopped
  • 1 large carrot, chopped
  • 1 small onion, chopped
  • 1/4 teaspoon ground thyme
  • 1 pinch of cayenne
  • 1 bayleaf
  • salt & pepper to taste
8 bowls

Directions

Boil hard for 20 minutes.

Turn down heat and simmer until peas are tender.

Strain through fine sieve.

Reheat to boiling point.

Serve.
