Southern Waffles

The sifting and whipping seems a bit much for breakfast. But the end product is delicious -- crisp with great flavor -- probably due in part to the fact it uses butter rather than oil (which I've seen in other recipes).

Ingredients

  • 2 cups flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups buttermilk
  • 3 eggs, separated
  • 1/2 cup melted butter, cooled
4-6 servings

Directions

Preheat waffle iron.

Sift together the dry ingredients in a large bowl.

Combine buttermilk, egg yolks and butter.

Mix dry and wet ingredients together until just moistened.

Beat egg whites until soft peaks form.

Fold into batter.

Add a portion of the batter to the waffle iron (amount will depend on your appliance) and cook until steaming stops. About 5 minutes.
