Have you eaten shredded wheat cereal? Then you know the frustration of finding a HUGE pile of cereal at the bottom of the bag. I mean it's almost a whole serving...WASTED. Well no more. I look around and found others who shared my grief and provide a solution...muffins.
The original recipe had a few variation with fresh fruit...but my fridge was bare. So I made due with some apple sauce and raisins I had in my pantry.
This recipe was pretty forgiving because the results were very good...even without the streusel top.
Ingredients
- DRY INGREDIENTS
- 3 cups flour
- about 1 cup shredded wheat dust
- 3 Tablespoons cinnamon
- 2 Tablespoons baking powder
- 2 teaspoons salt
- 1/2 teaspoon nutmeg
- WET INGREDIENTS
- 1 cup brown sugar
- 2 eggs
- 1 1/2 cups milk
- 1/2 cup oil
- 1/2 cup apple sauce
- FILLING
- 2 cups raisins
Directions
Preheat oven to 375º.
Grease or line muffins tins.
Mix dry ingredients.
Mix wet ingredients.
Add the two together until just mixed.
Fold in the raisins.
Spoon into muffin tins and bake for 20-25 minutes.
