This is a super easy recipe where you let the oven do all the work. Plus, the kids love it. Nuf said.
- 1 head of cauliflower, cut into florets
- olive oil to coat
- 3 cloves minced garlic
- 1/2 lemon, juiced
- salt & pepper, to taste
- 1/4 cup asiago cheese, grated
Preheat oven to 400°.
Place a single layer of cauliflower in a baking pan.
Coat with olive oil.
Toss with lemon juice and garlic.
Sprinkle with salt and pepper.
Roast for 25-30 minutes, until cauliflower is fork tender.
Remove from oven and sprinkle with cheese.
