
Here's a super fast coffee cake that can easily be pulled together with pantry/fridge staples.
Ingredients
- BATTER
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 1/3 cup sugar
- 1/2 teaspoon salt
- 1 stick butter -- 1/3 cup butter, the rest will be melted and used separately
- 1/2 cup milk
- 1 egg
- 1/2 teaspoon vanilla extract
- TOPPING
- 1/2 cup brown sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground cinnamon

Directions
Preheat oven to 425ยบ.
Grease and flour a 9 inch square pan.
In a food processor, add the dry ingredients for the batter. Pulse to quickly mix.
Cut in cubes of 1/3 cup butter. Blend until you have a cornmeal texture.*
In a small bowl, add the wet ingredients for the batter.
Add to food processor, pulsing until the ingredients just become blended.
Pour batter (which will be thick) into the baking pan and spread evenly.
Drizzle top with melted butter.
In a small bowl mix together topping ingredients and prinkle on top of cake.
Bake for 20 minutes or until an inserted pick comes out clean.
*If you're old school, you can use a pastry knife to work this.
