Pumpkin Pie

Another perfect pie from "The Old-Fashioned Cookbook" by Jan McBride Carlton


  • 1 uncooked pastry for a single crust pie
  • 1-1/2 cups pumpkin
  • 3 eggs
  • 1 cup sugar
  • 1-1/4 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves, ground
  • 1-2/3 cups half & half
  • Whipped cream (optional)
1 pie


Preheat oven to 425º.

Line the pie pan with the pastry and finish the edges.

Mix all of the filling ingredients.

Place lined pie tin on oven rack and pour filling into pan.*

Bake for 10 minutes.

Reduce heat to 350º and continue to bake for another 30-35 minutes or until an inserted knife comes out of the center of the pie cleanly.

Cool on a wire rack.

Serve with whipped cream, if desired.

*That way, you won't be tying to transport the filled, uncooked pie across your kitchen.
