So here's another muffin experiment using odd ball things in my pantry. This week's contestant -- my toddler's last package of Prunes with Apples baby food -- which gave the muffins a "warm" feel and a subtle sweetness. Because they slightly smelled like raisins, I would consider adding them to the mix next time.

So today's lesson...baby food is not just for babies.

Ingredients

  • DRY INGREDIENTS
  • 1-3/4 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon cinnamon
  • WET INGREDIENTS
  • 1 cup buttermilk
  • 2 -3.5 oz packages of Gerber 2nd Stage Prunes with Apples
  • about 1/4 cup applesauce
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup raisins (optional)
12-14 muffins

Directions

Preheat oven to 375ยบ.

Either line muffin tin with paper liners or grease each cup.

In a large bowl, sift together the dry ingredients.

In a measuring cup, add the baby food. Then add enough applesauce to bring the measure to 1 cup.

In another large bowl, add all the wet ingredients and mix.

Combine the wet and try ingredients until just blended. Do not over mix.

If desired, fold in raisins.

Spoon into muffin cups and bake for about 20 minutes or until golden brown.

Allow to cool in the pan for a few minutes...then remove and complete cooling on a wire rack.
