Peach Compote

It's that time of year for peaches! While I love to just eat them, with an overflowing tree, I've gotta find other uses.

Here's a recipe from Epicurious that yummy. Now I just have to figure out how to safely can this. :o)

Ingredients

  • 1 lb pitted, peeled, & sliced peaches (fresh or frozen)*
  • 1/2 cup of brown sugar
  • 1/4 cup water
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • * This means, if you're going fresh, you'll need to get more than a pound. I used about 10 tiny peaches from my yard. You'll need less if you go larger.
1-1/2 cups

Directions

Add all ingredients to a saucepan and cook over a medium heat, stirring occasionally, for about 15 minutes. At that time, the contents should have thicken into a syrup.

Serve over ice cream or pancakes.
