Linguine With Clams

Found this recipe off a package of pasta and it has since become one of our staple quick pasta meals. Also, as a result, we now always keep a can of clams and a bottle of clam juice on hand in the pantry.

Ingredients

  • 1 package/lb linguine
  • 1 (8oz) bottle clam juice
  • 1 (6.5 oz) can chopped or minced clams
  • 3 tablespoons butter
  • 1 tablespoon parsley (double if fresh)
  • 1 clove minced garlic
  • 1/4 teaspoon pepper
  • OPTIONAL TOPPINGS
  • Parmesan cheese
  • red pepper flakes
4-6 servings

Directions

Cook pasta per the directions on the package and drain.

In medium saucepan, combine clam juice, liquid from clams, butter, parsley, garlic, and pepper over medium-high heat. Bring to boil and cook for 10 minutes.

Remove from heat and stir in clams.

Toss with hot pasta.

Serve with Parmesan cheese and red pepper flakes.

    This looks super simple and easy to do. Will need to go stock up on clams and clam juice. Wonder if the kids will eat the clams. Will find out.
