Italian Sausage Pasta Sauce

If I need pasta quick...I will open a jar of sauce. If I have a day, I make the sauce from my copy of "The Old-Fashioned Cookbook". But if I have an hour (and a pound of ground meat on hand) then this is my go to sauce.

Ingredients

  • 1 pound Italian sausage (hot or mild)
  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 1 28oz can of whole tomatoes*
  • 1 6oz can of tomato paste
  • 6oz hot water
  • 1/2 cup red wine
  • 2 tablespoon Parmesan cheese, grated
  • 1 teaspoon salt, plus additional to season meat
  • 2 teaspoons brown sugar
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/2 teaspoon rosemary
  • 2 cloves garlic, minced
  • pepper to season meat
4-5 servings

Directions

Saute sausage with onion and season with salt & pepper, to taste. Cook until meat loses bright red color then drain excess juices.

Add remaining ingredients. With a pair of scissors, roughly chop up the tomatoes. Simmer for about 30 minutes.

Serve over pasta with Parmesan cheese.
