
Here's another recipe from the "Holy Redeemer's Mothers' Club Kitchen Kapers". This specific recipe was submitted by Mrs. Charles Redmond. I just added a few more seasonings to the meat sauce, which I've noted with asterisks.
Ingredients
- MEAT SAUCE
- 1 Tablespoon olive oil*
- 1 medium onion, diced
- 1 lb ground beef
- 1 Tablespoon chili powder
- 1 Tablespoon oregano*
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon cayenne pepper*
- 1 clove garlic, minced*
- 1 4.5 oz can chopped olives
- 1 8 oz can tomato sauce
- 6 corn tortillas, buttered
- 1/2 lb cheddar cheese, shredded
- 2/3 cup water

Directions
Preheat oven to 400ยบ.
Add olive oil to a hot skillet. Add onion and saute for about a minute. Add beef and cook until the bright pink color is gone.
Add the spices, olives and tomato sauce.
In an 8x8 baking dish, line the bottom with tortillas, followed by a layer of meat sauce and cheese. Repeat ending with a layer of cheese. Pour water at an edge into the bottom of the casserole.
Bake for 30 minutes.
