Everyone loves apple pie, especially when it's topped with a sugar crumble.
Actually, I like the fact that if I spend the time to make pie dough, I get two apple pies for the effort of one batch of dough. :o)
BTW, no eggs here so your veggie friends will be happy.
Ingredients
- Pie Dough for a single crust pie
1/2 cup sugar- 1/4 cup brown sugar, packed
- 3 Tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
5-1/2 cups peeled cored sliced apples*- 1 Tablespoon lemon juice
TOPPING- 3/4 cup flour
- 1/4 cup sugar
- 1/4 cup brown sugar, packed
- 1/3 cup butter, softened
* I used half Granny Smith and half Fuji but I'm all for using what you have on hand.- Also, as I cut and peel the apples I keep them in a bowl of lemon water to prevent browning, which I drain before I'm ready to use them.
Directions
Preheat oven to 375°.
Prepare the pie tin -- roll out the dough, place in pan, and finish the edges. Chill the crust as you prepare the other ingredients.
Mix the topping ingredients with a pastry blender or fork until you have a coarse crumble. Set aside.
In a separate bowl, mix the sugars, flour, and spices.
In another [large] bowl, sprinkle the apples with lemon juice. Then toss in the sugar mixture.
Arrange the fruit in the pie crust.
Sprinkle the topping evenly over the apples.
Bake about an hour.
