
So what happens when you get midway through a recipe only to discover you don't have nearly enough of the main ingredient -- well, in this case...DELICIOUSNESS!
In my pursuit for the perfect macaroon, I attempted a Disney World recipe that uses sweetened coconut. Of course, I didn't realize it until it was too late that my 7oz bag a coconut was no where near the 3 cups required. However, I continued on and to my delight, the result was awesome.
Sort of a cross between a macaroon and a coconut custard pie. It's so good you can't help but take a bite before sharing a cookie.
Ingredients
- 4 egg whites
- 1 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup flour
- 7oz bag sweetened shredded coconut
Directions
Preheat oven to 325ยบ.
Whisk together egg whites, sugar & salt in a metal bowl over hot water until creamy.* Then remove from heat and stir in the vanilla, flour & coconut and let mixture set.
On a baking sheet lined with parchment paper, place mounds of the batter. Bake for 20-25 minutes or until golden brown.
*I dunked the bowl of my mixer into a second bowl filled with boiling water. However, I would assume this could be done with a double boiler on the stove.
