
So this recipe came my way via the Trader Joe's Buttermilk carton. The only thing I added were the mini-chocolate chips and -- due to a typo on the carton -- I guessed at the amount of vanilla. The result, though, was delicious.
Ingredients
- DRY INGREDIENTS
- 2 cups flour
- 1/4 cup brown sugar, packed
- 1 teaspoon baking soda
- 1-1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 eggs, separated
- 2 cups buttermilk
- 1 teaspoon vanilla
- 1/2 cup butter, melted
- 1 cup mini-chocolate chips (optional)
4-6 servings
Directions
Mix the dry ingredients together and set aside.
Whip the egg whites until they reach stiff peaks and set aside.
Mix the remaining wet ingredients and then add to the dry ingredients. Stir until just incorporated.
Fold in egg whites and chocolate chips.
Pour batter into waffle iron and cook until golden brown (usually this is when a majority of the steam stops escaping from the iron).
Serve with a sprinkling of mini chips, maple syrup, and (if you're feeling wild) whipped cream.
