
At a used book sale, I found a jewel -- the "Holy Redeemer's Mothers' Club Kitchen Kapers". It's hard to tell when these yellowed pages where actually printed. The local ads inside have a combination of 7 digit phone numbers and the old telephone exchange numbers.
Having carrots on hand, I figured I've give this carrot cake recipe a try. This recipe was submitted by Mrs. Helen Genuser. The resulting loaf was a dark, flavorful cake; the nutmeg/allspice/cloves providing a definite bite.
Ingredients
- 1-1/3 cup sugar
- 1-1/3 cup water
- 1/4 cup butter
- 3 medium carrots, grated
- 1 cup raisins
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 1 teaspoon nutmeg
- 1 teaspoon allspice
- 1 teaspoon cloves
- DRY INGREDIENTS:
- 2 cups flour
- 1 teaspoon baking soda
- 1 cup nuts (optional)
1 loaf
Directions
Preheat oven to 350 and grease & flour a loaf pan.
Combine all but the dry ingredients in a saucepan and boil for 5 minutes. Cool.
Stir in the dry ingredients then pour into the loaf pan.
Bake for an hour.
1-1/4 hour

As I ponder further about this loaf, I think when I try this recipe again I may half the cloves. I think it was a tad too dominate of a flavor.
