Ten years ago I worked in an office where there was this messenger who would every now and then slip us a jar of his salsa in addition to what ever artwork he was dropping off at the time. The salsa was delicious but all I could get out of him was a list of five ingredients.
Move forward to the present and I come across a note paper that says "Carlos' Salsa -- whole canned tomatoes, jalapenos, onions, cilantro, and salt -- mix in blender."
My memory is foggy regarding the specific taste of the salsa but here's my attempt at Carlos' Salsa...with a little garlic addition of my own. (Wouldn't be surprised if he held back that secret ingredient!) Next time, I may try this with a squeeze of lime juice.
Ingredients
- 1-28 oz can whole peeled tomatoes
- 1 diced jalapeno (about 3 tablespoons -- deveined & seeds removed if desired)*
- 3/4 cup diced onions
- 3 tablespoons roughly chopped cilantro
- 3/4 teaspoons salt
- 1 clove garlic
- *I find one jalapeno lends to pretty tame salsa. But that assessment depends on the taster and the jalapeno. If you want more heat, feel free to up the pepper content.
Directions
Add all ingredients in a blender and mix.
Allow salsa to rest an hour before serving to allow flavors to blossom.
Serve with chips or whatever else you like to eat with salsa.
