Apple Banana Muffins

Normally I bake with bananas because I've had some sort of nightmare about a banana that's darkening on my counter. But what if you're worried about that banana teaming up with an apple in the fridge? Well then this recipe is for you.

Ingredients

  • 1 cup flour
  • 1/3 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 2 large mashed bananas (about 1 cup)
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla
  • 1 apple
  • paper baking cups to line muffin tin
12 muffins

Directions

Preheat oven to 375ยบ.

Mix dry ingredients in large bowl.

In a separate bowl mix bananas, butter, and vanilla.

Peel and dice apple. Add the apple to the dry ingredients bowl and stir until all the apple parts are coated.

Add the banana mixture and mix until just moistened. Don't overmix.

Line muffin tin and split mixture between 12 muffin cups.

Bake for about 25 minutes or until golden brown and a test pick comes out clean.

Remove from oven and cool in pan for 5 minutes.

    BTW, I like the fresh apple pieces in the muffin but my husband was expecting more of a cinnamon pop. So, if you're like him you may want to coat the apples in cinnamon sugar before adding them to the mix. Or double the cinnamon. Or maybe both.
