- Roasted sweet potatoes (with olive oil, salt, and pepper)
- Pickled red onions
- Feta cheese, crumbled
- Cilantro, chopped
- Olive oil
Roast sweet potatoes (I cooked 2 at 400 degrees for about an hour), then mash after cooking.
Pickle the red onion. After an hour, dice some of the red onion.
Dice the tomato and season with salt and pepper.
Chop the cilantro.
Gather ingredients and assemble on toasted bread: Spread the sweet potato, add tomato, red onion, feta, and cilantro. Finish with some olive oil across the top.
