Balls

I learned this recipe from my niece who uses this as a raw/vegan pie crust. I thought it would make a good no bake cookie. It does. I haven't used it as a pie crust, but my niece just pressed the mixture into a pie pan and topped with a load of fresh fruit.

Ingredients

  • Use one cup of each: Nuts, coconut, dates. Try different combinations of nuts, etc. For this recipe:
  • 1/2 cup walnuts
  • 1/2 cup raw almonds
  • 1/2 cup finley shredded coconut
  • 1/2 cup shaved coconut
  • 1 cup finley chopped dates (about 12 big dates)
about 12 balls

Directions

Pulse the nuts in food processor until some nuts are fine (almost like nut flour) while others are about corn size. Look for a variation from fine to small-coarse.

Cut stems off and remove pits from dates. Cut into long strips and then turn and cut into small pieces.

Mix nuts, coconut, and dates together with your hands. You want to break up the date pieces and incorporate.

You will end up with a big ball. Divide the ball and keep dividing until you have about a dozen balls.

15-20 minutes

    It's hard not to make a joke right now so I'll just say that I love no bake recipes and can't wait to try these!
