
Shortbread cookies with cashew nuts are soft and melt in mouth cookies. These cookies are easy to bake at home with a few ingredients.
Ingredients
- 1 cup ALL PURPOSE FLOUR
- 0.50 cup BUTTER WITHOUT SALT
- 0.50 cup SUGARS GRANULATED
- 0.25 cup CASHEW NUTS RAW
- 0.50 tsp BAKING POWDER
- 1 pinch SALT TABLE
Directions
Pre-heat the oven to 350 degrees and line the baking sheet with a parchment paper.
In a wide bowl cream the butter and sugar together using an electric mixer. Add finely chopped cashew nuts, all-purpose flour, salt, baking powder and mix well. Knead to a soft and smooth dough.
Divide the dough into small portions and shape them into your desired shape using a cookie cutter (I used a heart shape cookie cutter) or simply roll into small circles in between your palms and press slightly for the round shape cookies.
Arrange on a parchment paper with a 2-inch space apart between each cookie and bake in a pre-heated 350 degrees oven for 10 - 12 mins until the bottom side of a cookie color turns to a light golden brown.
Allow the cookies to cool and serve or store in an airtight container
