
Kids would love this rice, because of its mild spice flavor and ghee. Crispy fried cashew nuts, onions, and raisins give more taste to this dish. I used basmati rice for this dish, Soaking time and the amount of water for cooking depends on the quality of your rice
Ingredients
- 5 tbsp GHEE
- 2 cup BASMATI RICE
- 4 cup WATER
- 1 cup ONIONS SLICED
- 2 no GREEN CHILIES
- 1 no CINNAMON
- 4 no CLOVES
- 4 no CARDAMOM
- 2 no BAY LEAF
- 2 tsp CUMIN SEED
- 10 gms CASHEW NUTS CHOPPED
- 10 gms RAISINS
- 0.50 cup FRIED ONION
Directions
Soak the rice in water for an hour. In a large pan, heat ghee, add the cashew nuts, raisins and roast until the cashew nut color changes to golden brown and raisins become plump. Remove cashew nuts and raisins using slotted spoon and keep aside until needed.
Add the cinnamon stick, cloves, cardamom, bay leaves and saute until nice aroma comes out.
Add the cumin seeds, sliced onion, green chilies and cook until onion becomes soft.
Add the soaked rice and saute for a minute. Add water, salt and mix well. Bring it to boil, cover and cook until the water gets absorbed by rice completely. Garnish with roasted cashew nuts, raisins, fried onions and mix well.
