Delicious homemade lasagna with thermomix

Ingredients

  • 150 grs textured soy fine-grained
  • 500 grs hot water
  • 30 grs of soy sauce
  • 60 grs of extra virgin olive oil AOVE
  • 100 grs red onion in pieces
  • 100 grs sliced ​​carrot
  • 400 grs canned chopped tomato
  • 35 grs of green pepper
  • 35 grs of red pepper
  • 1 vegetable concentrate tablet
  • 1 tbsp dried oregano
  • 3 pinches of ground pepper
  • 2 garlic cloves
  • ½ tsp of salt
  • 2 pinches ground nutmeg
  • 700 grs milk
  • 70 grs of all-purpose wheat flour
  • 30 grs butter
  • Mozzarella cheese to taste
  • 1 package of pasta sheets for lasagna

Directions

1 Put a bowl on the lid of the thermomix, activate the scale mode and weigh the soybeans, soy sauce and hot water. Mix a little with the spatula and let it rest for half an hour.

2 Place the onion in quarters, the garlic cloves, the carrot, the pepper, the tomato and the olive oil in the thermomix glass. Chop everything for 3 seconds at speed 5.

3 Lower the ingredients from the glass with the spatula and program 8 minutes at 120ºC in speed 1 to make a sauce.

4 Drain the hydrated soybeans with the help of the basket or a strainer and add it to the glass along with the crumbled vegetable concentrate tablet, the pepper and the oregano. Mix a little with the spatula and program 12 minutes at 100ºC and speed 1. Reserve.

5 Put the milk, flour, butter, salt, nutmeg and pepper in the thermomix glass and program 8 minutes at 90ºC, reverse turn, spoon speed. Reservation.

6 Preheat the oven to 200ºC with heat up and down.

7 Follow the instructions for the lasagna noodles you purchased. In my case, I have put a saucepan with plenty of water and a teaspoon of salt to boil, then I have put the lasagna sheets and I have respected the indicated time (4 minutes).

8 Put a little bechamel in a baking dish, spread with a spatula.

9 Place the pasta sheets that are necessary to form the first layer on the béchamel.

10 Add a layer of our sauce and carefully spread over the entire surface of the pasta.

11 Sprinkle some Parmesan cheese over the sauce.

12 Sprinkle some béchamel over the spread cheese.

13 Add a new layer of pasta and repeat the above steps 3-4 times - depending on how tall you want.

14 Finish with a layer of pasta, the rest of the béchamel sauce and a layer of cheese for the final gratin.

15 Cover with aluminum foil and bake for 15 minutes.

16 Remove the aluminum foil and let grill for 5 minutes with the grill or fan mode active. Cut the portions, serve hot and enjoy.
