
For people who have acid reflux, you don't have to avoid tomatoes. By cooking tomatoes for 1 minute the acid is gone and instead you get Lycopene from it which is excellent for your health.
Ingredients
- 1 block of tofu 14 oz to 1 lb. cubed
- 1 medium ripe tomato, washed & sliced
- 2 green onions, washed & cut in sections
- 5 mushrooms washed & sliced (optional)
- 1/2 sheet of seaweed, cut in pieces (optional)
- ginger, sliced thinly
- cilantro,
- olive oil
- pepper
- salt

Directions
1. Turn on medium high heat & add oil
2. Once oil is getting hot, put in ginger & stir
3. Add green onion & stir
4. Add mushroom & stir
5. Add tomato & cook for 1 min. & stir
6. Add 2 1/2 cups of water & bring it to a boil
7. Add tofu & bring it to a second boil
8. Turn heat off & add seaweed
9. Add salt pepper & cilantro to taste
