Ingredients
- I large eggplant, sliced
- 1 bunch green onion cut in long sections
- 5 or 6 mushrooms sliced
- 1 red pepper (optional) sliced
- 5 tablespoons of olive oil
- 2 tablespoons of chicken broth or water
- 1 teaspoon of preserved black bean paste
- 3 cloves of garlic chopped
- 3 thin slices of ginger chopped

Directions
1. Put sliced eggplant in a bowl, add little salt & pepper, turn around them with your hand
2. With frying pan, turn on medium high heat
2. Put in 3 tablespoons of oil & heat it up
3. Arrange eggplant over the frying pan & fry.
4. When it turns yellowish brown, turn over & fry the other side.
5. When eggplant is soft and brownish, pick them up & place in a plate
6. Add oil to pan in medium high heat
7. When pan is hot, put in ginger, garlic, red pepper & stir
8. Add mushroom and green onion and stir
9. Pick up ginger, garlic, red pepper, mushroom & green onion and put them in a plate.
10. Turn heat to medium low, pour in fried eggplant and add chicken broth, black bean paste, stir & bring it to a boil
11. Turn heat off & pour in the seasoning mix of ginger, garlic, red pepper, mushroom and green onion & stir
12. Taste it and add salt, pepper or sugar to your taste
