A Healthy & Tasty Vegetarian Dish by Amah

Ingredients

  • 2 zucchinis washed & sliced
  • 1 carrot washed & sliced
  • 6 mushrooms washed & sliced
  • 4 green onions washed & cut in sections
  • 3 cloves of garlic smashed
  • 2 tablespoon olive oil
  • 1 cup of lightly salted cashew nut
  • Salt & pepper

Directions

1. Heat olive oil in a pan over medium-low heat.

2. Add garlic and stir until lightly brown.

3. Add green onions, stirring for 30 seconds.

4. Add zucchini, carrot, and mushroom. Stir for 1 min.

5. Pepper & salt to taste (since cashews are already salted, you may not need addition salt)

6. Place cooked veggie in a plate & pour cashew nut over the top
