
Ingredients
- 2 zucchinis washed & sliced
- 1 carrot washed & sliced
- 6 mushrooms washed & sliced
- 4 green onions washed & cut in sections
- 3 cloves of garlic smashed
- 2 tablespoon olive oil
- 1 cup of lightly salted cashew nut
- Salt & pepper

Directions
1. Heat olive oil in a pan over medium-low heat.
2. Add garlic and stir until lightly brown.
3. Add green onions, stirring for 30 seconds.
4. Add zucchini, carrot, and mushroom. Stir for 1 min.
5. Pepper & salt to taste (since cashews are already salted, you may not need addition salt)
6. Place cooked veggie in a plate & pour cashew nut over the top
