Watermelon Salad with Feta and Mint

the tabasco in the dressing gives it a subtle kick. this recipe is crisp and refreshing--perfect for any summer meal. just don't make it too far in advance of when you'll serve it. (the watermelon starts to break down and get mushy when it sits for too long with the other ingredients. i learned this the hard way when i made a double batch so i could have it for lunch the following day. not good.)

Ingredients

  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • salt and pepper
  • 1 teaspoon Tabasco or other hot sauce
  • a large watermelon chopped into chunks
  • 1 cup feta cheese, crumbled
  • 1 small sweet onion, diced
  • 1 cup coarsely chopped mint leaves
4-6 servings

Directions

In a large bowl, whisk the oil, lemon juice, salt, tabasco and pepper. Add the watermelon, feta, mint and onion and toss gently.
