Sometimes you just want to put a pleasing mass of potatoes in your mouth.

Ingredients

  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 3 T olive oil
  • 1/2 C grated parmesan
  • 1 t thyme
  • 1 T truffle oil
  • 1.5 pounds peeled baking potatoes, cut into 1/8-inch-thick slices
  • topping made of panko and parmesan, or anything else you'd like to use
8 inch square

Directions

Preheat oven to 425°

Wash the potatoes and run them through a food processor or mandoline to slice them thinly.

Mix them up with the olive oil, truffle oil, parmesan, salt, pepper and thyme in a large bowl.

Put that mixture in a ceramic baking dish, sprinkle it with the topping, and bake, covered, for 20 minutes.

Remove the lid and bake for 20 more minutes.
