Veggie Chilaquiles with Avocado Salsa Fresca

this is tasty and easy to make--great for any meal, any time of the day.

Ingredients

  • 1/2 large red bell pepper, chopped
  • 1/2 cup chopped mushroom
  • 1/2 cup chopped red onion
  • 4 large eggs
  • 2 (6-inch) corn tortillas, cut into 1/2-inch strips
  • 1/2 C shredded pepper jack cheese
  • SALSA
  • 1 T chopped fresh cilantro
  • 2 small avocados, chopped
  • 2 T chopped red onion
  • 1 t lemon juice
  • 1/4 t paprika
  • 1/8 C sliced grape tomatoes
  • 1 T salsa verde

Directions

Make the salsa by mixing all the ingredients together; set it aside.

Saute the bell pepper, mushroom, onion and tortilla strips in some canola oil until tender. Beat the 4 eggs together and add to the mix, scrambling until cooked.

Serve onto plate and top with cheese and a dollop of salsa fresca.

Black beans cooked with cilantro make a great side dish.
