
This recipe will make one tiny bundt and 2-3 cupcakes or one 8- or 9-inch round.
Ingredients
- 5 tablespoons butter, melted
- 3/4 cup granulated sugar
- 2 large eggs
- 2/3 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 1/2 cups flour
- 1/2 t baking powder
- 1/2 t salt
- 1/4 t ground ginger
- 1/2 t hot cinnamon
- 2 T cocoa powder
Directions
Preheat oven to 350°.
Coat a 9-inch round springform pan with vegetable oil or butter. Or use a bundt, butter it very well, flour it and tap out the excess.
Put the melted butter in a mixing bowl. Add granulated sugar, stirring with a whisk. Add eggs, 1 at a time; stir well each time. Stir in milk, extracts. Add flour, baking powder, salt, ginger, cinnamon and cocoa; stir well.
Bake at 350° for 35-40 minutes or until lightly browned and a wooden pick inserted in center comes out clean.
Cool 10 minutes in pan on a wire rack. If it's a bundt, invert it onto a plate at exactly 10 minutes, no more no less time. Sprinkle with powdered sugar if you like....
