Ingredients
- 1.5 C sugar
- 1 C vegetable oil
- 3 eggs
- 2 C flour
- 1.5 t cinnamon
- 1 t baking soda
- 1 t vanilla
- 1/2 t salt
- 3 C chopped tart apples (about 3 medium)
9 x 13 pan
Directions
Heat oven to 350. Grease and flour a 9 x 13 cake pan. Mix sugar, oil and eggs together until blended, then beat for 1 minute. Stir in remaining ingredients, except apples. Beat 1 minute. Stir in apples. Scrape into pan.
Bake until wooden pick inserted in center comes out clean, 30-40 minutes.
