Sesame-Scallion Bok Choy

the bok choy is steamed, so this is a healthy-tasty side dish. you can tweak the sauce in various directions--spicy, sweet-ish, asian or not. I'm thinking a mustard viniagrette might be nice. This version is sesame oil, tamari and scallions--flavorful but neutral--as a side dish to tofu and super-hot kimchi.

Ingredients

  • 1 lb bok choy, halved or quartered, depending on size
  • 3 T soy sauce or tamari
  • 2 scallions, chopped
  • 1 T sesame oil
  • 1 T rice vinegar
4 servings

Directions

steam the bok choy in a vegetable steamer for 6 minutes or until tender.

in the meantime, whisk all the other ingredients together.

when the bok choy is done, toss it with the sauce and serve.

10 minutes
