Seared Scallops with Avocado and Watermelon Salad

Adapted from two different recipes... the mint, watermelon and avocado make a good backdrop to the slightly spicy seared scallops. It's a great late summer dish....
Ingredients
- 1/2 teaspoon freshly ground black pepper
- 3/8 teaspoon salt
- 1/2 teaspoon cumin
- 2 T canola oil
- 6 large sea scallops
- 1 small cucumber, sliced and halved
- 2 tablespoons fresh lime juice
- 2 teaspoons extra-virgin olive oil
- 2 cups spring mix
- 2 cups (1-inch) cubed seedless watermelon
- 1/8 cup fresh mint leaves, torn
- 1/2 peeled avocado, cut into 8 slices

Directions
1. Mix together salt, pepper and cumin in a bowl, roll the scallops in the mixture.
2. Arrange the lettuce, cucumber, watermelon, most of the mint leaves and the avocado on 2 plates.
3. Mix lime juice and olive oil together, and smash some mint leaves into the mixture. Divide and pour over the 2 plates.
4. Heat 2 T canola oil in a skillet until just about smoking, then add the scallops. Sear for 2 minutes on one side, then turn over and sear for two more minutes.
5. Place 3 scallops on each plate. Serve.
