Potato Fennel Hash

A yummy spin on potato hash.

Ingredients

  • 2 C shredded potatoes
  • 2 C thinly sliced fennel bulb
  • 1 C thinly sliced onion
  • 1 C sliced mushrooms
  • 1 C diced red bell pepper
  • olive oil
  • salt and pepper
4 servings

Directions

If you have a food processor, it makes this recipe very easy. Put the potatoes through the grater attachement and the fennel and onion through the slicer attachment. Throw everything (including mushrooms and red pepper) into a large skillet that has been oiled. Cook until it has reached the state of tenderness and crispiness you desire.
