- 1 C unsalted shelled pistachios
- 1 C chopped tomatoes
- 1 garlic clove
- 1 T dried mint
- 2 T grated parmesan
- 1/2 t red pepper flakes
- 1 T olive oil
- 2 C spinach
grind it all up in a food processor until it is pesto consistency. you may want to add some more olive oil at the end and mix it in by hand.
if you serve it with pasta, reserve some of the pasta cooking liquid for mixing the pesto with the pasta.
also really good as a spread for sandwiches, etc.
