One-Bowl Cakes: Chocolate Cake with Cayenne Ganache

and you don't even need a mixer to do it.
Ingredients
- 8 tablespoons butter
- 3/4 cup cocoa powder
- 1.5 cup packed dark brown sugar
- 3 large eggs
- 3/4 teaspoon baking soda
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt $
- 1 1/4 cup all-purpose flour
- 3/4 C hot coffee (or 3/4 C hot water + 1 teaspoon instant espresso granules or 2 teaspoons instant coffee granules)
- a bundt pan, or a 10-inch round
- 4 oz good quality chocolate, finely chopped
- 1-2 T milk or cream
- 1/2 T butter
- 1/2 t cayenne pepper
Directions
Preheat oven to 350°.
Butter a bundt pan (or a 10-inch round) really well and then coat with flour. Tap out excess.
Melt the butter and place it in a bowl. Add cocoa, stirring well with a whisk. Add brown sugar, stirring well until mixture pulls away from sides of bowl.
Add eggs, 1 at a time, stirring with a whisk until smooth. Stir in baking soda, vanilla, and salt. Stir in flour. add coffee to flour mixture, stirring just until blended.
Pour batter into prepared pan. Bake at 350° for 25-35 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes on a wire rack (no more no less if you want to remove it from the pan, as you so with a bundt).
Put the chocolate, cream, butter and cayenne into a saucepan and heat it over very low heat (chocolate burns easily) until the chocolate is melted. Stir with a whisk until smooth. Drizzle over cake.
Once the ganache is set, sprinkle with a cinnamon/sugar mixture if you wish.
