
This is fast and simple, and great on a sandwich, as a side dish, or as a chunky dip.
Ingredients
- 1 can white beans, drained and rinsed
- 3 T chopped red onion
- 1.5 T chopped fresh parsley
- 2 T fresh lime juice
- 1.5 T olive oil
- fresh black pepper
Directions
Drain and rinse the beans, put them in a bowl and mash them roughly with a fork. Mix in the red onion, parsley, lime juice, olive oil and pepper. You're done.
