
Comfort food, vegetarian style.
Ingredients
- 4 ounces ciabatta or italian bread, cut into 3/4-inch cubes
- 4 ounces multigrain bread, cut into 3/4-inch cubes
- 3/4 cup shredded sharp cheddar cheese
- 1/4 cup chopped green onions, divided
- 1/2 cup milk
- 1/2 cup vegetable stock
- 1/8 teaspoon freshly ground black pepper
- 8 strips veggie bacon
- .75 C vegetables (this time I used roasted onions and peppers that I had left over from grill night. you could use sauteed zucchini, or boiled spinach, or frozen peas....)
- 2 large egg yolks, lightly beaten
- 2 large egg whites

Directions
1. Preheat oven to 375°.
2. Place bread cubes on a cookie sheet coated with olive oil or cooking spray. Bake at 375° for 10 minutes or until lightly toasted, turning once. Remove from oven; cool.
3. Combine bread, 1/2 cup cheese, 3 tablespoons onions, and next 5 ingredients (through egg yolks) in a large bowl. Stir so the liquid is evenly distributed.
4. Place egg whites in a small bowl, and beat with a mixer at high speed until foamy (about 1 minute).
5. Gently fold egg whites into bread mixture.
6. Pour the mixture into a 9-inch square baking dish lightly greased with olive oil. Bake for 20 minutes or until lightly browned.
7. Serve with reserved shredded cheddar and green onions.
