Mac and Cheese

This Brother Jimmy's (www.BrotherJimmys.com) Mac and Cheese recipe is unbelievable and is perfect to serve to any of your guests. Within seven steps you will have a mouth-watering dish to indulge in.

Ingredients

  • 1 lb Elbow Macaroni
  • 1 Tbs Kosher Salt
  • ¾ Cup Spanish Onion, small dice
  • 2 Tbs Butter
  • 1 lb Velveeta
  • 1 Cup Milk
  • ½ tsp Dry Mustard
  • 4 Tbs Butter
  • 1 ½ Cup Panko Bread Crumbs
6-8 servings

Directions

1. Bring water to boil with 1 tablespoon of salt, and add the macaroni cook to al dente – about 7-8- minutes.
2. Strain the pasta and rinse under cold water to stop the cooking. Set aside.
3. Melt the butter in a sauté pan and sweat the onions until they are soft and translucent. Set aside
4. In a double boiler cook the milk, Velveeta and mustard, stirring occasionally. When the cheese has all been incorporated and you have a smooth sauce add in the onions and mix well. Continue cooking until the sauce is thick enough not to run when you swipe a finger on the back of a wooden spoon
5. Combine the macaroni and the cheese sauce and pour into a casserole dish.
6. Melt the remaining 4 tablespoons of butter and mix in the panko. Stir for a couple of minutes to toast. When the crumbs are golden brown remove from the heat and sprinkle this mixture on top of the macaroni and cheese.
7. Bake in a 350-degree oven for a 30 – 40 minutes until the top is golden and bubbly around the edges
