I've made many subpar recipes lately, including a failed attempt at baked pumpkin donuts earlier this evening. When faced with deformed baked goods that I couldn't possibly bring to my son's preschool tomorrow, I decided to go to an old, delicious standby from my late grandmother's recipe book. Always a good thing.
Ingredients
- Dry Ingredients:
- 1/2 tsp salt
- 1 cup sugar
- 1/2 tsp baking soda
- 2 cup flour
- 1 1/2 tsp baking powder
- (above are supposed to be sifted together, which I do and my mom does not do)
- 1 orange
- 2 Tbsp melted butter
- 1 egg (very well beaten)
- 1 cup cranberries (cut into 1/2 or 1/4)
- 1/2 cup chopped nuts (optional)
Directions
*Put juice and grated rind of one orange in a cup. Add 2 T melted butter. Add boiling water to fill to 3/4 cup.
*Stir in dry ingredients.
*Add well-beaten egg.
*Add nuts (optional).
*Fold in cranberries.
Bake in greased loaf pan (recipe says to line the bottom in a brown paper bag, but that's not entirely necessary) for 1 hour at 350ยบ.
OR make muffins and start checking the oven at about 20 mins for mini muffins, a bit longer for regular muffins.
