Hummus Snack Platter

I absolutely love this hummus platter! It works great as an appetizer, a party dish, or even a light meal or snack. The flavors of all the ingredients are rich, refreshing, and fulfilling. I probably make this at least once a week for family and guests.

Ingredients

  • - 6 Sargento® Colby-Jack Cheese Snacks
  • - 6 Sargento® String Cheese Snacks
  • - 5 cups fresh vegetables (baby carrots, bell pepper "scoops," broccoli florets, seedless cucumber slices)
  • - 1 can (14.5 oz.) no-salt added garbanzo beans or chickpeas
  • - 1/4 cup liquid from can of garbanzo beans
  • - 4 cloves minced garlic
  • - 2 tablespoons fresh lemon juice
  • - 2 tablespoons olive oil or tahini (optional)
  • - Smoked paprika

Directions

Cut each cheese snack crosswise in half. Arrange on platter with vegetables. Puree beans, liquid, garlic, lemon juice and olive oil or tahini to make hummus. Sprinkle paprika on hummus and serve as dip.
