So I want to make a salad, and we have some great cherries in the fridge.... I don't think I've ever had a cherry salad but it sounds good. Almonds seem a tasty companion to add some crunch along with a balsamic vinaigrette. Tasty! Happy Mother's Day!
Ingredients
- A bowlful of greens of your choice ( I used a head of romaine and some spring greens in the fridge)
- 1 cup of fresh cherries, pitted and halved
- 1/3 of a medium purple onion, thinly sliced and quartered
- 3/4 cup almonds, chopped or slivered. (I went with marcona, but any will do. I'd toast normal ones.)
- 1 tbsp dried rosemary
- (full disclosure: I used packaged almonds with rosemary from trader joe's we had in the pantry and it covered both bases and did the trick.)
- For the dressing:
- 2 tbsp virgin olive oil
- 1tbsp balsamic vinegar
- Salt and pepper
- 1tsp dried rosemary

Directions
Pretty straightforward:
Chop or tear the greens into one inch pieces if needed.
Add the onions, cherries, and almonds and either toss or leave them on top as you like to make it look nice.
Then dress toss and serve!
