I overheard a women say that you can make "ice cream" out of frozen bananas. So, here is what I came up with. I know this will never be ice cream, but it has the texture of gelato which counts for a lot and it is way better than eating all that fat/sugar. Also if you're the parent of a kid who can't stop talking about ice cream, this is an awesome alternative. (If no one has thought to call this banana alternative, GeNOTo, I would like credit please.)

Ingredients

  • 1/3 Soy or Coconut Milk (milk, etc.)
  • 2 Frozen Bananas (See Directions)
  • 2 Tablespoons Raw Almonds
  • 1 Tablespoon Shredded Coconut
  • 1 Tablespoon Unsweetened or Sweetened Cocoa
2-3 servings

Directions

Cut two ripe bananas (not overly ripe) into chunks and lay flat in a container or Ziploc bag and put in the freezer overnight.

Use a high powered blender. (Do not use a food processor - it will be sad for your clothes and your counters. Trust me.)

Add all ingredients (break up bananas with hands) to the blender and start on low. Try various speeds. It will take a few minutes to get it going. Stop and break up the bananas with a fork and begin again. At first you might think this will never happen, but in the end you will achieve something that looks like gelato - it's GeNOTo.
