Cucumber Lime Punch

Cucumber Lime Punch by Humuhumu

I came up with this punch as a non-alcoholic option for my baby-havin' party. I winged it, so I don't really have exact measurements, but that's okay... you should go by your own taste, anyhow. Pregnant women suffer through month after month of too-sweet non-alcoholic drinks, and this punch offers a light, crisp, refreshing counterpoint.

Ingredients

  • 4 parts Simply Limeade (can be found in near the OJ in the refrigerator case at the grocery store), or if you're awesome, homemade limeade (it's not that hard, I just ran out of time)
  • 4 parts club soda (I used soda from my SodaStream)
  • 1 part cucumber juice
  • muddled mint
  • pinches of salt
  • ice

Directions

I used a juicer to juice 3 English cucumbers, with the skins still on. English cucumbers have nice, thin skins, and give a fun, bright green, fresh smelling juice. If you don't have a juicer, Google can tell you how to juice cucumbers with more basic tools.

Combine all but the mint and salt, and tweak to your own taste. Muddle the mint in the punch. Go easy on the salt, but do add it -- it's good, trust me! Add plenty of ice. Add cucumber slices and whole mint leaves for garnish if you're feeling elaborate.

To level up your fancy: make an ice ring the night before with cucumber slices and mint leaves in it. Silicone bundt molds are awesome for this.
